Not the best pic but this is the best pre-packaged turkey lunch meat hands down that doesn't have nasty nitrites added. Of course no dairy either, yum!

I started this blog under the name Dairy-free a few years ago dairy made my daughter's eczema unbearable and upset her tummy. I love to cook and because of her misery I tweaked every possible recipe I made for her and our family. She has mostly outgrown that dairy sensitivity and my thoughts on food have grown up as well. Here's to food that is tasty and healthy!
1/2 cup canola oil
1 cup sugar
2 eggs beaten
3 mashed ripe bananas
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 cups all-purpose flour
3 Tbsp plain soy milk ( I use Silk brand)
1/2 tsp vanilla extract
*optional* 1/2 cup chopped nuts, any variety ( I leave them out b/c my husband and kids won't eat them in bread)
BIG HINT: get a Kitchen-aide stand mixer and this can be made easily in one bowl.
Pre heat oven to 350 degrees.
Beat oil and sugar till fluffy. Add eggs and mashed bananas and mix well. Add sifted dry ingredients, soy milk, and vanilla. Mix well and add nuts if you so choose. Pour into a greased and floured (or just coat liberally with no-stick cooking spray) 9x5x3 inch loaf pan. Bake at 350 degrees for 1 hour to 1 hour and 15 minutes. The bread is done when a toothpick inserted in the center comes out clean. Cool well and store overnight before cutting. If you just can't wait, slice it and enjoy it warm and crumbly. Freezes well.
